You are what you eat, or so they say. It’s certainly easy to understand that what goes into our bodies – such intricate and complex works of art – would affect how we feel. The chaos of the to-do list, the urgent and necessary, has led us to accept and appreciate food and drink that is prepared and ready for our consumption. We don’t question what goes into these things or how they’re made, we’re simply grateful to have food in our bellies so we can rush on to whatever is next on our list.

I’ll let you in on a secret: I absolutely hate to cook. Seriously, I’d rather scrub toilets than spend time in the kitchen. But I recognize that food made at home is typically less expensive and healthier, so I try to focus on quick and easy meals and/or recipes I can make in advance and then heat up for later use.

When possible, I double (and sometimes quadruple!) a recipe, dividing whatever we don’t eat right away into smaller containers that can be kept in the freezer. On a busy night, there is nothing better than grabbing a lasagna or soup out of the freezer and popping it into the oven or microwave for a quick meal.
